
Daniel Holzman
Daniel Holzman is the Chef/Owner of The Meatball Shop in New York City. He started his cooking career at age 15 at Le Bernardin. Working after school and on weekends, Daniel remained there for four years until, at the suggestion of Chef Eric Ripert, he attended the Culinary Institute of America with a full scholarship from the James Beard Foundation. Prior to graduation, Daniel accepted a position at the soon-to-open Paladin in New York City for Chef Jean Louis Paladin, working alongside such culinary notables as Wylie Dufresne and Sam Mason. He followed this with a 10-year culinary journey through some of Los Angeles’ and San Francisco’s finest restaurants, and in 2008 founded KB Treats LLC, an ice cream novelty company, with three partners. The products, called Q-Bees, can be found in markets nationwide, including Whole Foods, Giant, and Stop and Shop.

Morel Mushroom Toasts. A friend of mine who was working at Chez Panisse made this recipe at his house and it was one of those transcendent food experiences. For me, there's nothing better than a simply prepared morel mushroom. At The Meatball Shop, we serve sides of morels braised with carrots. I think its fun to prepare something so rare and special with something so common. Carrots have got to be the single most under-appreciated vegetable out there, so delicious.

Soot Bull Jeep. I'm in L.A. a couple of times a year and never miss a meal at Soot Bull Jeep in Koreatown. I could eat Korean BBQ all day every day and this is the best place I've been to. It's super smoky in there, one of the few great meals I can think of that requires a shower after.

Roger Vergé's Vegetables in the French Style. I reach for this book whenever the seasons change and I'm looking for inspiration. My mother gave it to me from her library a few years back and it never fails to impress. This book reminds me constantly how often we take vegetables for granted and just how special they can be.
